Harvard Business School professor Michael Luca studied Seattle restaurants over six years using Yelp's own rounding rules as a natural experiment: two restaurants with nearly identical underlying scores (3.74 vs 3.75) get rounded to different displayed ratings (3.5 vs 4.0 stars). Same restaurant quality, different number on the screen — which let him isolate what the number itself does to revenue, separate from actual food quality.
The finding: a one-star increase in Yelp rating raises revenue 5-9% for independent restaurants. A separate Berkeley study using similar methods found a half-star bump alone makes a restaurant 30-49% more likely to sell out during peak hours.
Why This Hits Independent El Paso Restaurants Specifically
Here's the detail most articles about this study leave out: the effect only held for independent restaurants — chains showed no ratings effect at all. A chain's brand recognition does the convincing before anyone reads a review. A restaurant like yours doesn't have that cushion. Every point of that rating is doing real work that a national chain's reputation would otherwise do for free.
What Actually Moves the Number
It's not just accumulating more 5-star reviews. Two things move the needle that most restaurants ignore:
- Recency. A rating built on reviews from two years ago reads as stale — to both diners and to Google's own ranking signals. A steady trickle of new reviews outperforms a pile of old ones.
- Response rate. Responding to reviews, especially critical ones, signals an owner who's actually paying attention. Silence on a bad review reads as confirmation; a thoughtful response often converts a reader into a reservation anyway.
